Welcome to Part 2 of our cocktail icecapades! Toda Welcome to Part 2 of our cocktail icecapades! Today we are discussing the exact opposite of king cubes. The tiny little cubes known as pearl ice, nugget, pebble, pellet, cubelet, gem or even sonic ice, are made in a special ice machine. They began as a kind of stand-in for manually crushing ice for cocktails like mojitos and mint juleps. But boy, it did not stop there. There is something so pleasing about these little nuggets of joy, visually, texturally and thermodynamically. The way they let the cocktail just flow in around them, their low density and the way they keep your drinks SUPER chilled. This chilling is due to two different properties of this ice. 1. They’re tiny so you can reduce negative space in your glass. 2. Their surface area to volume ratio is very high, increasing the portion of the drink that is in contact with the ice. So, more cold makes cold cold, BUT, more surface area means more dilution over a shorter period of time. As a consequence, this ice is best suited to full flavoured, higher sugar content drinks that need to be refreshing and COLD. Put a negroni on pearl ice? You’ll have a watered down mess. Put a Swizzle, Caipirinha or a Bramble on pearl ice? You’ll have the most refreshing patio cocktail you’ve ever tasted.
Now, where this differs to crushed ice (regular cubes smashed down with a Lewis bag and mallet) is in the consistency and density of the pieces. The pearl ice involves more air trapped in the body of the pellet, making it easy and satisfying to crunch down on, spawning many hastags and facebook groups dedicated to this format of frozen water. We’ve just received the unfortunate news that on We’ve just received the unfortunate news that one of our team members has tested positive for COVID-19. This member of staff worked Tuesday March 23rd - Saturday March 27th and after feeling unwell on Sunday decided to book a test and isolate. Thanks to some speedy work by the labs, we received the results today, and have made the decision to close immediately in the interests of public safety, awaiting advice from AHS. We will remain closed until all our staff have been tested, and completed any mandatory isolation periods and we are 100% confident it is safe to re-open. 

We are confident that our strict safety measures will have prevented staff to customer spread, with heavy use of disinfectant, masks, hand sanitizer and this staff member's responsible behaviour.

We’ve done the research, and we’ve got to say, one of the highest impact and least appreciated parts of your cocktail has got to be the ice. From the making to the serving, it’s important to always treat your ice with respect, and select the format that best highlights your cocktail. So. Which ice goes where? Part of our four part series, we’re first going to discuss king cubes. They’re the really big cubes we favour for Old fashioned’s and Negroni's. Easy to handle, they keep a drink cool and approachable, but we use them mostly in spirit forward, pre-diluted cocktails. These large cubes are great because they’re super hard, and they keep themselves cold. According to their surface area to volume ratio, king cubes will keep your drink chilled without adding too much further dilution as you sip. If you consider this as you would consider the melting snow piles around the city. The fresh sprinkling across the lawns and sidewalks are the first to melt. Let the snow pile up around your sidewalk, that might take a little longer to disappear. The huge, packed down snow piles you find in parking lots? They’ll be around long into the spring. As @tinyreececocktails is so fond of saying, ‘cold keeps cold cold.’ He may not be the most eloquent but you know, he’s not wrong. 
Downsides to king cubes? The same concept means they take a long time to freeze, and we have to make those bad boys manually, so take a moment to appreciate them next time you're in!
