A lot of the products we use behind the bar have a A lot of the products we use behind the bar have a prestigious association with barrel aging. Whisky, rum, brandy, tequila, even gin can be defined by the length of time they spend in a barrel, so what's the obsession with wood?  Barrel aging has a very practical origin. Liquor was often stored in clay pots, but when transporting over oceans, sailors found that wooden barrels were much easier to roll around and far less fragile. It wasn't long before they noticed that letting the potions sit in the oak created a smoother and more mellow sipper. The oak slowly imparts flavour and color into the spirit, whilst creating an environment for controlled oxidation of the product. Experts today predict that 60% of a spirits defining characteristics come from barrel aging.  Enter: Our barrel aging program. Where improvement is seen in these spirits, we’ve taken it one step further. If you’ve darkened our door any time in the last 18 months, you will surely have noticed the shelving in the North side of the bar hosting a veritable smorgasbord of mini barrels, which may even have sparked the common question, ‘Wow! Do those actually contain liquor?’  Well of course! And now we yield the fruits of our labor. Many of these barrels were filled at the beginning of our lockdown.
