It started, as most good things do, with people who love booze.In 2012, Jesse Willis and Jeff Jamieson opened Vine Arts, a modest wine and spirits shop with a modest selection of cocktialing liquors and bitters. Calgary had opinions. Soon Vine Arts was stocking everything you could imagine to make a great cocktail and it became clear the city needed a room built entirely around the drink.
So, in the spring of 2015, they built Proof.
Since then, we have focused on one thing: making a genuinely great cocktail feel like the most natural thing in the world to order. Proof is not the kind of cocktail bar that requires a password, a pocket square, or a working knowledge of pre-Prohibition rye.
We believe craft cocktails should be exciting, not intimidating.You do not need to know your Boulevardier from your barrel-aged anything. That is our job, and frankly, we are annoyingly good at it.
Behind the bar sits one of the largest spirit collections in the country: more than 350 bottles, rolling ladders and all. The people pouring from it would genuinely rather geek out with you than talk down to you.
